We have lots of tomatoes ripening now, so I was able to can three quarts of tomato sauce yesterday (plus a small freezer container full). I'm hoping I'll be able to get at least another 3 before the season ends. As I mentioned in a previous post, this year's garden has been slow to grow and produce. So we're preserving as much of it as we can!
Almost all of the ingredients in this year's sauce came directly from our garden. Three of them here are oregano, onions, and garlic.
We used a combination of Brandywine, Amish Paste, (and when you're desperate) cherry tomatoes.
All combined in a big pot.
Cooked, reduced, and ready to preserve!
All finished!
