Spinach Salad Recipe

I have an abundance of spinach growing in the garden right now, so we had my mom's Spinach Salad with grilled hamburgers and hot dogs for dinner last night.  It was delicious!  A good Summer meal (even though, right now, our temperatures are more Fall-like!).  Here is the Spinach Salad recipe:

1 package salad spinach (or fresh from the garden!), torn and washed (pick larger stems off)
1/2 lb. bacon, crisped and crumbled
2-3 eggs, hard-boiled and sliced
1 can water chestnuts, sliced
3/4 cup bean sprouts

Dressing: In blender/food processor mix:
1 small onion
1/2 cup oil
1/2 cup sugar
2 1/2 tablespoons ketchup
2 tablespoons vinegar
1 tablespoon Worcestershire sauce

After washing and tearing up the spinach, I put it in a small salad spinner to dry it up a little.  You don't have to do this step, though, if you are running short on time.

Combine the first 5 ingredients in a large bowl.

Put the next 6 ingredients in a blender or food processor and blend until smooth.

The dressing will look like this when done.

Pour about half of the dressing into the salad and mix together.  Any remaining dressing can be stored in the refrigerator for future use.
