Homemade Tomato Sauce

We made some homemade tomato sauce on Sunday using tomatoes and herbs fresh from our garden.  We had it for dinner last night and it was delicious!  Here's how we made it.

I'm not sure of the exact amount of pounds of tomatoes that we used, but there are about 18 of varying sizes here.  They are Heirloom Brandywine tomatoes.  We also used two yellow onions and 10 cloves of garlic.

We chopped the garlic and sauteed it in 1/3 cup olive oil for about 1-2 minutes to bring its flavor out a little.

We chopped the tomatoes and onions and added them to the pan along with about a half teaspoon of sea salt (to help bring out the tomato flavor).

It took about 3 hours of "simmering down" to get to this consistency (stirring occasionally).  We added the herbs (fresh sage, oregano, and basil...about 2 tablespoons of each) and a tablespoon of sea salt to the sauce with about 10-15 minutes left of simmering.  This made two 1 quart plastic containers of sauce (I plan to freeze the second one).
