Freezes and frosts are quickly approaching, which means I needed to finish getting my root vegetables out of the garden and get everything cleaned up and prepared for the winter season. I still had carrots, potatoes, and a few onions left to harvest. Both the carrots and potatoes did really well this year! We'll definitely be enjoying some stews in the near future!
Some of the carrots were huge!
All diced and blanching for 3 minutes.
Waiting for them to cool before filling them into freezer bags. We ended up with 6 and a half quart bags of diced carrots!
A pretty good harvest of potatoes!
Placing them on a table for now (covered under a layer of newspaper) until we move them to the basement.
